Mix well and adjust: add a splash more syrup for sweetness or lemon juice for extra brightness. Pour the mixture into a shallow freezer-safe container. Freeze for 2 hours. Remove and blend in a high-speed blender or food processor until smooth and slushy. Return to the freezer for another 2–3 hours, or until set and scoopable.
